Fukushima Beef Bonheur

Ingredients for 10 servings
  • Fukushima beef fillet70g x 10 portions → should weigh 1.4kg before preparation
  • Shiitake mushroom

  • Tokoiro edamameshould weigh 200g when dry. Cover with water and leave overnight.
  • Buckwheat seeds200g

  • Soy sauce1bottle (approximately 200g)

  • Season the piece of beef. Add oil to a frying pan and sear the surface. Continue to cook in an oven. Cover with aluminum foil and leave in a warm place.
  • 〈Garnish (garniture)〉
  • Add oil to a frying pan and stir-fry the thinly sliced onions. Add the burdock cut into round slices and continue to cook.Add the soy sauce, miso, dashi stock made with konbu, and shiitake mushrooms and continue to cook.
  • Cook the edamame (for 15 minutes if a pressure cooker is used). Puree it in a food processor with dashi stock made with konbu.Season with salt and pepper and a small amount of miso.
  • Prepare the buckwheat seeds by cooking them in hot water.Grate the daikon radish.
  • Slice the roasted beef and arrange it on a plate. Serve it with pureed beans, braised vegetables, grated daikon radish, and buckwheat seeds. Provide a small amount of soy sauce to accompany the grated daikon radish.
